The New Zealand Pork, Bacon and Ham Awards 2018

The New Zealand Pork, Bacon and Ham awards provide you with an opportunity to showcase the very best of your product to be judged by acclaimed food writers, meat experts and chefs.

Entries are now open for the 2018 Awards.

Categories

New Zealand Pork

Innovative Pork

Showcase your skills and creativity with something new!

Entries can be from any pig cut excluding small goods.

Only marinades, seasonings and stuffings made on your premises can be used.

Cooking time for the entry (or a portion of it) to be within 30 minutes.

Convenient Pork

Create a tasty pork product for a quick and easy weekday meal solution.

Entries must use New Zealand fresh pork from the shoulder: skin-on or skinless, bone in or bone out. Small goods are allowed provided New Zealand pork is the only meat protein (ingredients must be declared).

Any marinades, seasonings and stuffings can be made in a butcher’s premises or purchased (if purchased, the brand must be declared).

Cooking time must not exceed 20 minutes

Entries must be presented as ‘ready-to-go’ and convenient.

For each entry please supply three fresh items for judging, along with your unique cooking instructions.

For both New Zealand Pork categories entrants will need to complete a check list to assist the judges in understanding their entry.

New Zealand Bacon

Middle

Bacon that is taken from the whole loin, including belly. (Dry Cured Middle bacons should be entered in the Dry Cured Category).

Dry Cured Middle

From the whole loin, including belly which has been cured by means other than injecting brine.

Can be green or smoked. Bacon is not to be blanched, cooked or gas-flushed.

Shoulder

Bacon that is taken from the shoulder.

Streaky

Bacon that is taken from the tail end of the loin or belly.

Middle Eye

Bacon that is taken from the loin with the skin off.

New Zealand Ham

Bone-in Ham

Half a leg of ham from the chump/thick end. Cooked on the bone. No Champagne Ham, nor from the hock end.

Boneless Ham

Slices of ham cut from the leg.

Medals

Top entries in each category may be awarded Gold, Silver and Bronze medals.

Supreme Award

A Supreme winner in each category (Pork, Bacon and Ham) will be determined.

Awards Dinner

A formal Awards Dinner will take place on Thursday 2 August at The Orange in Auckland. This will be a formal event and we encourage all entrants and wider industry to attend and celebrate the competition winners and the wider NZ Pork industry. Medalists will receive a complimentary ticket.
